Press the tofu with a paper towel to remove excess moisture, then cut into bite-sized cubes.
Heat coconut oil in a large pan or wok over medium-high heat. Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.
In the same pan, add the green curry paste and sauté for 1 minute to release the aromatics.
Slowly pour in the coconut milk, whisking to combine with the curry paste.
Add the sliced red bell pepper and zucchini to the pan. Bring to a simmer and cook for 5-7 minutes until the vegetables are tender-crisp.
Stir in the soy sauce and brown sugar. Return the cooked tofu to the pan and simmer for another 2 minutes.
Remove from heat, stir in the fresh Thai basil leaves, and serve warm over cooked jasmine rice.
