Heat a splash of olive oil in a large pan over medium-high heat. Add onion and garlic, cooking for 2 minutes.
Add the chopped kimchi and sauté for 3-4 minutes until it begins to soften and caramelize.
Stir in the spinach and let it wilt.
Add the cooked rice, breaking up any clumps. Pour the kimchi juice and soy sauce over the rice.
Stir-fry everything together vigorously for 3-4 minutes until heated through. Stir in the sesame oil, then divide into two bowls.
In a separate non-stick pan, fry the eggs to your preference (sunny-side up recommended).
Top each bowl of fried rice with a fried egg and serve immediately.
