  • Pasta (like Penne or Spaghetti)300 g
  • Olive Oil2 tbsp
  • Onion1 medium, chopped
  • Garlic4 cloves, minced
  • Tomatoes400 g canned diced or fresh
  • Spinach150 g fresh
  • Salt and Black Pepper1 to taste
  • Dried Oregano(optional)1 tsp

Instructions

    Cook the pasta in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain.

    While pasta cooks, heat olive oil in a large skillet over medium heat. Sauté the chopped onion and garlic for 3-4 minutes until soft and fragrant.

    Add the tomatoes (with their juices) and dried oregano. Season with salt and pepper. Simmer gently for 8-10 minutes.

    Stir in the fresh spinach and let it wilt into the sauce (about 2 minutes).

    Add the drained pasta to the skillet, tossing to coat. Add a splash of reserved pasta water if the sauce is too thick. Serve warm.
