Cook the pasta in a large pot of salted boiling water according to package directions. Reserve 1/2 cup of pasta water, then drain.
While pasta cooks, heat olive oil in a large skillet over medium heat.
Add finely chopped onion and minced garlic, sautéing for about 3-4 minutes until translucent and fragrant.
Add the tomatoes and Italian seasoning. Cook for 6-8 minutes until the tomatoes begin to burst and release their juices.
Stir in the fresh spinach and cook for 1-2 minutes until wilted.
Add the drained pasta to the skillet, tossing to coat. Splash in a little reserved pasta water if the sauce needs loosening.
Season generously with salt and pepper before serving.
