  • Thai red curry paste2 tbsp
  • Coconut milk14 oz
  • Extra firm tofu1 block
  • Red bell pepper1 sliced
  • Broccoli florets1.5 cups
  • Carrot1 sliced
  • Soy sauce1 tbsp
  • Maple syrup(optional)1 tsp
  • Coconut oil1 tbsp

Instructions

    Press the tofu to remove excess water, then cut into bite-sized cubes.

    Heat coconut oil in a large pan over medium heat. Fry tofu cubes until golden on all sides, then remove and set aside.

    In the same pan, add the red curry paste and sauté for 1 minute until fragrant.

    Slowly pour in the coconut milk, stirring to dissolve the curry paste.

    Add the sliced carrots, broccoli, and bell pepper. Simmer for 8-10 minutes until the vegetables are tender-crisp.

    Stir in the soy sauce, maple syrup, and fried tofu. Simmer for an additional 2 minutes, then serve hot with rice.
