  • Firm Tofu300 g, crumbled
  • Garlic4 cloves, minced
  • Thai Bird's Eye Chilies(optional)2 finely chopped
  • Soy Sauce1.5 tbsp
  • Honey0.5 tsp
  • Holy Basil (or Italian Sweet Basil)1 cup, packed
  • Olive Oil1.5 tbsp
  • Eggs2 large
  • Cooked Rice2 cups

Instructions

    In a small bowl, mix the soy sauce, honey, and 1 tablespoon of water.

    Heat 1 tablespoon of olive oil in a wok or large skillet over high heat. Add the minced garlic and chilies, stir-frying for 30 seconds until highly fragrant.

    Add the crumbled tofu and stir-fry for 3-4 minutes until it starts to brown slightly.

    Pour in the sauce mixture and stir-fry for another minute until the tofu absorbs the liquid.

    Toss in the basil leaves, turn off the heat, and stir until the basil is wilted.

    In a separate skillet, heat the remaining 0.5 tablespoon of olive oil over high heat and fry the eggs until the edges are crispy and the yolk is runny.

    Serve the stir-fry over rice, topped with the crispy fried egg.
