  • Firm Tofu250 g
  • Thai Green Curry Paste2 tbsp
  • Coconut Milk400 ml
  • Spinach150 g
  • Onion0.5 medium
  • Garlic2 cloves
  • Soy Sauce1 tbsp
  • Rice1 cup
  • Olive Oil1 tbsp

Instructions

    Prepare the rice according to package directions.

    Cube the tofu. Heat olive oil in a pan and sear the tofu until lightly golden. Remove and set aside.

    In the same pan, add the green curry paste and cook for 1 minute over medium heat until fragrant.

    Slowly pour in the coconut milk, stirring to dissolve the curry paste. Bring to a gentle simmer.

    Add sliced onion, minced garlic, and soy sauce. Simmer for 5 minutes.

    Stir in the tofu and spinach. Cook for another 2-3 minutes until the spinach is wilted.

    Serve hot with the steamed rice.
