  • Extra firm tofu14 oz
  • Green curry paste2 tbsp
  • Coconut milk14 oz
  • Red bell pepper1 piece
  • Bamboo shoots0.5 cup
  • Soy sauce1 tbsp
  • Brown sugar1 tsp
  • Thai basil leaves(optional)0.5 cup
  • Coconut oil1 tbsp

Instructions

    Press the tofu with a heavy object for 10 minutes to drain excess water, then cut into 1-inch cubes.

    Heat coconut oil in a large pan over medium-high heat and pan-fry the tofu cubes until golden brown on all sides. Remove and set aside.

    In the same pan, add the green curry paste and fry for about 1 minute until fragrant.

    Slowly pour in the coconut milk, whisking to combine with the curry paste. Bring to a gentle simmer.

    Add the sliced red bell pepper and bamboo shoots. Cook for about 5 minutes until the vegetables are tender-crisp.

    Stir in the soy sauce and brown sugar. Return the tofu to the pan and simmer for another 2 minutes to heat through.

    Remove from heat and stir in the Thai basil leaves just before serving. Serve over jasmine rice.
