  • Firm Tofu400 g, cubed
  • Potatoes2 medium, cubed
  • Spinach2 cups
  • Thai Green Curry Paste2 tbsp
  • Light Coconut Milk400 ml
  • Garlic2 cloves, minced
  • Olive Oil1 tbsp
  • Cooked Rice3 cups

Instructions

    Boil the cubed potatoes in a pot of salted water for 8-10 minutes until slightly tender, then drain.

    Heat olive oil in a deep pan over medium heat. Add garlic and green curry paste, stirring constantly for 1 minute until fragrant.

    Pour in the coconut milk and bring to a gentle simmer.

    Add the boiled potatoes and cubed tofu to the curry. Simmer for 10 minutes to allow the flavors to meld.

    Stir in the spinach and cook for 1-2 minutes until wilted.
