Press tofu to remove excess moisture, then cut into bite-sized cubes.
Pan-fry the tofu cubes in a skillet with a little oil until golden and crispy on all sides. Set aside.
In a large pan or wok, heat 2 tablespoons of coconut milk over medium-high heat. Add curry paste and fry for 2 minutes until fragrant.
Pour in the remaining coconut milk, soy sauce, and brown sugar. Bring to a gentle simmer.
Add sliced bell pepper and bamboo shoots. Simmer for 5-7 minutes until the vegetables are tender-crisp.
Stir in the crispy tofu and fresh Thai basil. Simmer for 2 more minutes, then serve hot with jasmine rice.
