Cube the tofu and press dry with a paper towel.
Mince the garlic and slice the onion.
Heat 1 tablespoon of olive oil in a wok or large pan. Fry the tofu until golden brown on all sides. Remove tofu and set aside.
Add the remaining olive oil to the pan. Sauté garlic and onion until fragrant (about 1 minute).
Push the vegetables to the side, crack the eggs into the pan, and scramble them quickly.
Add the cold rice, fried tofu, and soy sauce. Toss everything over high heat for 2-3 minutes.
Stir in the spinach and Thai basil leaves. Toss just until the spinach is wilted and the basil is aromatic, then serve.
