Peel the sweet potatoes, chop them into cubes, and steam or boil them until tender (about 10-12 minutes). Drain well.
In a bowl, mash the sweet potatoes with the cumin, chili powder, and a pinch of salt.
Stir the rinsed black beans into the mashed sweet potato mixture.
Spread a layer of the sweet potato and bean mixture onto one half of each tortilla, then sprinkle with cheese. Fold the tortillas in half.
Heat a small amount of oil in a skillet over medium heat. Toast each quesadilla for 2-3 minutes per side until the tortilla is golden brown and the cheese is completely melted.
