  • sweet potatoes2 medium
  • canned black beans, drained and rinsed15 ounce
  • flour tortillas8 whole
  • shredded cheddar cheese1.5 cups
  • ground cumin1 teaspoon
  • chili powder0.5 teaspoon
  • vegetable oil1 tablespoon

Instructions

    Peel the sweet potatoes, chop them into cubes, and steam or boil them until tender (about 10-12 minutes). Drain well.

    In a bowl, mash the sweet potatoes with the cumin, chili powder, and a pinch of salt.

    Stir the rinsed black beans into the mashed sweet potato mixture.

    Spread a layer of the sweet potato and bean mixture onto one half of each tortilla, then sprinkle with cheese. Fold the tortillas in half.
