  • Spinach300 g
  • Cheese (Feta or Mozzarella)100 g
  • Onion1 medium
  • Olive Oil2 tbsp
  • Puff Pastry Sheets (or Flatbread Dough)2 sheets
  • Milk(optional)1 tbsp

Instructions

    Preheat your oven to 400°F (200°C).

    Finely chop the onion and sauté in 1 tablespoon of olive oil until translucent.

    Add spinach to the pan and cook until fully wilted. Squeeze out any excess liquid from the spinach mixture.

    In a bowl, combine the spinach-onion mixture with crumbled cheese and the remaining olive oil.

    Cut puff pastry sheets into squares. Place a spoonful of the spinach-cheese filling in the center of each square.

    Fold the corners of the dough over the filling to form a triangle or pyramid shape, pinching the edges tightly to seal.

    Brush the tops of the pastries with a little milk for a golden finish.

    Bake for 15 minutes or until golden and puffy.
