  • Potatoes3 large, cubed
  • Olive Oil2 tbsp
  • Garlic4 cloves, minced
  • Chili Flakes1 tsp
  • Coriander / Cilantro0.25 cup, finely chopped
  • Lemon Juice2 tbsp
  • Spinach2 cups

Instructions

    Preheat oven to 400°F (200°C). Toss cubed potatoes with 1 tablespoon of olive oil and a pinch of salt. Spread on a baking sheet and roast for 20-25 minutes until crispy and golden.

    In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and chili flakes, sautéing for 30 seconds.

    Add the roasted potatoes to the skillet, tossing them to coat in the garlic oil.

    Stir in the fresh lemon juice and chopped coriander, turning off the heat.

    In a separate pan, lightly steam or sauté the spinach with a splash of water until wilted.

    Serve the spicy potatoes over a bed of the wilted spinach.
