Ingredients

  • Chicken1 lb
  • Pancetta(optional)3 oz
  • Yellow onion1 medium
  • Carrot1 medium
  • Celery1 stalk
  • Crushed tomatoes28 oz
  • Dry red wine0.75 cup
  • Whole milk0.75 cup
  • Garlic2 tbsp
  • Tagliatelle pasta1 lb

Instructions

  1. 1

Finely mince the onion, carrot, and celery to create a soffritto.

  2. 2

In a heavy-bottomed pot, heat Garlic over medium heat. Sauté the soffritto and chopped pancetta until vegetables are soft.

  3. 3

Add Chicken, breaking it up with a wooden spoon, and cook until browned.

  4. 4

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Simmer until the wine evaporates completely.

  5. 5

Pour in the milk and simmer gently until it has mostly absorbed (this tenderizes the meat).

  6. 6

Stir in the crushed tomatoes. Reduce heat to the lowest setting, cover partially, and let simmer for at least 1.5 to 2 hours, stirring occasionally.

  7. 7

Serve tossed with freshly boiled tagliatelle pasta and grated parmesan.
