Finely mince the onion, carrot, and celery to create a soffritto.
In a heavy-bottomed pot, heat olive oil over medium heat. Sauté the soffritto and chopped pancetta until vegetables are soft.
Add ground beef, breaking it up with a wooden spoon, and cook until browned.
Pour in the red wine, scraping up any browned bits from the bottom of the pot. Simmer until the wine evaporates completely.
Pour in the milk and simmer gently until it has mostly absorbed (this tenderizes the meat).
Stir in the crushed tomatoes. Reduce heat to the lowest setting, cover partially, and let simmer for at least 1.5 to 2 hours, stirring occasionally.
Serve tossed with freshly boiled tagliatelle pasta and grated parmesan.
