Clean the sliced leeks thoroughly in cold water to remove any dirt or sand.
Heat the olive oil in a large pot over medium heat. Add the leeks and garlic, sautéing for 8-10 minutes until soft and translucent (do not brown).
Add the diced potatoes, vegetable broth, and bay leaf to the pot. Bring to a boil.
Reduce heat to low, cover, and simmer for 20 minutes, or until the potatoes are completely fork-tender.
Remove the bay leaf. Use an immersion blender to puree the soup until smooth and creamy. Season with salt and pepper to taste.
