In a small saucepan, bring the vegetable broth to a simmer over medium heat.
Add the rolled oats, reduce the heat to low, and cook for 5 minutes, stirring occasionally, until the oats are soft and have absorbed most of the liquid.
Fold in the baby spinach and finely grated parmesan cheese, stirring until the spinach is wilted and the cheese is melted.
Season the oatmeal with freshly cracked black pepper.
In a separate pan, cook the egg to your preference, such as poached or fried with a runny yolk.
Spoon the savory oatmeal into a bowl and top with the cooked egg before serving.
