Ingredients

  • Butternut squash2 lbs
  • Olive oil2 tbsp
  • Yellow onion1 piece
  • Garlic4 cloves
  • Vegetable broth4 cups
  • Light coconut milk0.5 cup
  • Ground nutmeg0.25 tsp
  • Fresh sage leaves(optional)4 pieces

Instructions

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Peel and seed the butternut squash, then cut it into 1-inch cubes. Toss with 1 tablespoon of olive oil, salt, and pepper.

  3. 3

Spread the squash on a baking sheet and roast for 25-30 minutes, or until tender and lightly browned.

  4. 4

In a large pot, heat the remaining olive oil over medium heat. Add the chopped onion and cook for 5 minutes until soft. Add the garlic and sage leaves, cooking for another minute.

  5. 5

Add the roasted squash, vegetable broth, and nutmeg to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

  6. 6

Remove the pot from the heat. Use an immersion blender to puree the soup until completely smooth (or transfer to a stand blender in batches).

  7. 7

Stir in the coconut milk, season to taste with salt and pepper, and warm gently before serving.
