Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until soft (about 5 minutes).
Add the garlic, cumin, and smoked paprika, stirring constantly for 1 minute to release the aromas.
Pour in the crushed tomatoes and chickpeas. Bring to a simmer and let thicken for 5 minutes.
Stir in the baby spinach until it wilts into the sauce.
Use a spoon to make 4 small wells in the tomato mixture. Gently crack an egg into each well.
Cover the skillet and cook over medium-low heat for 5-8 minutes, or until the egg whites are set but the yolks remain runny.
Garnish with chopped cilantro and serve hot.
