Bring a pot of water to a rolling boil. Gently lower the eggs into the water and boil for exactly 6 minutes for a soft jammy yolk.
Immediately transfer the eggs to an ice bath to stop the cooking. Peel carefully once cooled.
In a deep container, mix the soy sauce, water, honey, minced garlic, chopped onion, and sesame oil.
Submerge the peeled eggs in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
To serve, place two eggs over a warm bowl of rice and drizzle with a spoonful of the marinade.
