  • Linguine pasta12 oz
  • Large shrimp, peeled and deveined1 lb
  • Olive oil2 tbsp
  • Butter2 tbsp
  • Garlic4 cloves
  • Lemon juice3 tbsp
  • Lemon zest1 tsp
  • Fresh parsley0.25 cup
  • Red pepper flakes(optional)0.25 tsp

Instructions

    Cook the linguine in a large pot of salted boiling water according to package directions. Drain and reserve 1/2 cup of pasta water.

    Meanwhile, heat olive oil and butter in a large skillet over medium-high heat.

    Add the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.

    Add the shrimp to the skillet and cook for 2-3 minutes per side, until they turn pink and opaque. Do not overcook.

    Stir in the lemon juice, lemon zest, and cooked pasta, tossing everything to combine.

    If the pasta seems dry, splash in some of the reserved pasta water. Season with salt and pepper to taste.

    Garnish with fresh chopped parsley and serve immediately.
