Blanch the spinach in boiling water for 30 seconds, then immediately plunge into ice water. Squeeze out excess water thoroughly and chop coarsely.
In a bowl, toss the spinach with minced garlic, sesame oil, half of the soy sauce, and sesame seeds.
Heat olive oil in a pan and fry the eggs to your preference (sunny-side up recommended).
Assemble bowls with a base of rice, topped with the seasoned spinach and a fried egg. Drizzle with the remaining soy sauce.
