  • Chicken breast, thinly sliced400 g
  • Unsweetened Coconut Milk400 ml
  • Chicken broth2 cups
  • Garlic, crushed3 cloves
  • Fresh ginger, sliced (as galangal substitute)1 inch piece
  • Lemongrass paste1 tbsp
  • Fresh Spinach2 cups
  • Fish sauce2 tbsp
  • Lime juice2 tbsp

Instructions

    In a medium pot, combine the chicken broth, coconut milk, garlic, ginger, and lemongrass paste. Bring to a gentle simmer over medium heat.

    Add the sliced chicken to the pot and simmer for about 8 minutes until the chicken is fully cooked.

    Stir in the fresh spinach and cook for 1-2 minutes until wilted.

    Remove from heat. Stir in the fish sauce and lime juice. Adjust seasoning to taste and serve hot.
