  • Chicken breast, minced or finely chopped350 g
  • Garlic, minced4 cloves
  • Olive Oil1.5 tbsp
  • Soy sauce or tamari1.5 tbsp
  • Fish sauce1 tsp
  • Fresh basil leaves1 cup
  • Fresh Spinach (for serving bed)2 cups

Instructions

    Heat olive oil in a wok or large skillet over high heat. Add the minced garlic and stir-fry for 30 seconds until aromatic.

    Add the minced chicken, breaking it up with a spatula. Cook until the chicken is completely browned and cooked through, about 5-6 minutes.

    Drizzle in the soy sauce and fish sauce, tossing to coat the chicken evenly.

    Turn off the heat and stir in the fresh basil leaves, allowing them to wilt in the residual heat.

    Serve immediately over a fresh bed of spinach.
