Finely chop the onion and mince the garlic. Dice the tomatoes.
Heat olive oil in a large skillet over medium heat. Add onion and garlic, cooking until soft and fragrant (about 5 minutes).
Add the diced tomatoes and cumin (if using). Simmer for 10 minutes until the tomatoes break down into a thick sauce.
Stir in the spinach and cook until wilted.
Use a spoon to make 4 small wells in the sauce. Crack an egg into each well.
Cover the skillet and cook on low-medium heat for 5-8 minutes, until egg whites are set but yolks are still soft.
Top with crumbled cheese before serving.
