Preheat oven to 200°C (400°F).
Toss cubed potatoes with 1.5 tablespoons of olive oil, half the minced garlic, dried herbs, salt, and pepper.
Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway, until golden and crispy.
In a pan, heat the remaining olive oil and garlic over low heat. Add the diced tomatoes and cook for 2 minutes.
Add the spinach to the pan, turn off the heat, and toss until the spinach is just wilted from the residual heat. Drizzle with lemon juice if desired.
Serve the crispy garlic potatoes alongside the warm spinach and tomato salad.
