Rinse the rice thoroughly under cold water until the water runs clear.
Heat olive oil in a medium saucepan over medium heat.
Add finely chopped onion and minced garlic. Sauté for 3-4 minutes until softened but not browned.
Add the rice to the pan and stir constantly for 2 minutes to lightly toast the grains.
Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover with a tight-fitting lid, and simmer for 15 minutes (or follow package timing if using brown rice).
Remove from heat. Quickly place the fresh spinach on top of the rice and cover again immediately. Let it steam off the heat for 5 minutes.
Uncover, add lemon juice (if using), season with salt and pepper, and fluff with a fork, incorporating the wilted spinach into the rice.
