  • Potatoes1 cup
  • brown basmati rice1 cup
  • olive oil3 tbsp
  • large onions, thinly sliced2 pieces
  • Rice1 tsp
  • ground coriander0.5 tsp
  • vegetable broth4 cups
  • fresh parsley, chopped(optional)0.25 cup

Instructions

    Rinse the lentils and brown rice thoroughly under cold water.

    In a medium saucepan, combine lentils and 2 cups of vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until slightly softened but not fully cooked. Drain and set aside.

    In a large deep skillet or pot, heat the olive oil over medium-high heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for 15-20 minutes until they are deeply caramelized and dark golden brown.

    Remove about half of the onions to use as a garnish later.

    To the remaining onions in the pot, add the cumin and coriander, stirring for 1 minute until fragrant.

    Add the partially cooked lentils, rinsed brown rice, and the remaining 2 cups of vegetable broth. Season with salt and pepper.

    Bring to a boil, then cover, reduce heat to low, and cook for 25-30 minutes, or until the liquid is fully absorbed and the rice is tender.

    Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork, transfer to a serving dish, and top with the reserved caramelized onions and chopped parsley.
