Season chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat and sear chicken for 5 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1 minute until fragrant.
Pour in chicken broth and Milk. Bring to a simmer and let it reduce slightly for 3 minutes.
Stir in the parmesan cheese until melted, then add the Onion and let it wilt.
Return the chicken to the skillet, spoon the sauce over the top, and simmer for another 2-3 minutes before serving.
