Rinse the red lentils thoroughly and add them to the pot along with the crushed tomatoes and vegetable broth.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally, until the lentils are tender and creamy.
Stir in the coconut milk (if using) and season with salt and pepper to taste. Simmer for an additional 2 minutes before serving hot.
