  • dry red lentils1 cup
  • yellow onion, diced1 whole
  • garlic cloves, minced3 whole
  • ginger, minced1 tablespoon
  • canned crushed tomatoes14 ounce
  • vegetable broth2 cups
  • canned coconut milk(optional)0.5 cup
  • curry powder1.5 tablespoons
  • ground turmeric0.5 teaspoon
  • vegetable oil1 tablespoon

Instructions

    Heat the vegetable oil in a large pot over medium heat. Add the diced onion and cook for 5 minutes until soft.

    Add the minced garlic, ginger, curry powder, and turmeric. Stir constantly for 1 minute until fragrant.

    Rinse the red lentils thoroughly and add them to the pot along with the crushed tomatoes and vegetable broth.

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally, until the lentils are tender and creamy.
