Heat the vegetable oil in a large skillet over medium heat. Sauté the diced onion for 5 minutes.
Stir in the minced garlic, curry powder, and tomato paste. Cook for 1-2 minutes until the tomato paste darkens slightly.
Add the rinsed chickpeas and pour in the coconut milk. Stir well to combine all ingredients.
Bring to a simmer, then reduce heat to low and cook for 10 minutes to allow the flavors to meld.
Stir in the thawed spinach and simmer for another 3 minutes until heated through. Season with salt to taste and serve over rice if desired.
